Basil and Strawberry Chicken Salad Recipe By Suzanne Murray @ahealthyhappyglow

“I tend to have a similar lunch most days.  A big leafy green salad with oven roasted veg and either meat or fish.

I batch-cook once a week (oven roasted chicken and vegetables) and this usually does me for most of my lunches and I can add variety and different flavours by using different green leaves (mixed greens, spinach, chard, rocket etc), adding fresh herbs (e.g. basil, dill or cilantro) and sometimes adding fruit like strawberries, avocado or olives. ” – Suzanne
