Troy is currently a 4th year BSc student majoring in Geology at the University of Calgary. He was diagnosed with Crohn’s Disease in 2009 at the age of 17. He has undergone an incredible health transformation that is truly inspirational! Troy’s Pumpkin Pancakes Recipe
“I am obsessed with pancakes, I make them everyday.
I’m always trying different recipes and this is one of my absolute favourites.
These are super quick and easy to make, gluten free, low carb and high protein pancakes so give them a try.
Pumpkin also packs an abundance of disease-fighting nutrients, including:
- pantothenic acid,
- magnesium, and
- vitamins C and E,
making pumpkin a “Superfood”.” – Troy
Calories: 380 | 36g Protein | 21g Carbs | 14g Protein
(35g Blueberries added to top)
- 1 cup of canned pumpkin
- 2 eggs
- 3/4 cup egg whites
- Nutmeg, vanilla extract and cinnamon (to taste)
- Blueberries (optional)
- Mix all ingredients in a bowl.
- Cook in a pan as a pancake.
